Equipment

  • 1 electric mixer or hand mixer
  • 1 medium mixing bowl
  • 1 large mixing bowl
  • 1 Bundt pan

Ingredients
  

  • 4 large eggs
  • 1 tsp lemon juice
  • 2/3 cup cold water
  • 1 1/2 cups granulated sugar
  • 2 cups all purpose flour
  • 1 tsp vanilla

Instructions
 

  • Separate the egg yolks from the egg whites.
  • Put the egg whites in a medium mixing bowl and beat them until soft peaks form.
  • Add the lemon juice to the egg whites and continue beating until stiff peaks form.
  • Add the egg yolks and cold water to a large mixing bowl.
  • Beat at high speed until the egg yolk mixture reaches within a few inches of the top of the bowl. This can take 3-5 minutes.
  • Slowly add the sugar to the egg yolk mixture while beating at medium speed.
  • Slowly add the flour to the egg yolk mixture while beating at medium speed.
  • Add the vanilla extract. Mix it in.
  • Fold the beaten egg whites into the cake batter. Do not overmix.
  • Pour the batter into an ungreased Bundt pan.
  • Bake for 1 hour at 300 degrees until golden brown.
  • Let cool for about 15 minutes before removing it from the pan.
